Thanks for sticking up for one of Drupal's more useful unique features!

In my experience using multisite, allowing *any* site to have a custom copy of a contrib module will only lead to problems in the long run and isn't worth it. In your example the right approach would be to fix the problems on example.com so that it can use Views 3.7, rather than leading to further maintenance problems down the road. As the saying goes, if you don't have time to do it right the first time, when will you have time to do it over?
